Here’s a cold weather recipe for comfort food, that’s bound to warm you up. Great for a weekday supper or a get-together with friends.
Wintertime Chili Serves 4
Ingredients
2 Lbs Ground Beef
1 Whole Jalapeno
1 Red & 1 Green Bell Pepper
1 Small White Onion
1 Garlic Clove
1 Tomato
1 Tbsp Chili Powder
1 Tsp Ground Clove
2 Tsp Red Pepper Flakes
1 Carrot
2 Stalks of Celery
6 oz Can Tomato Paste
1/2 Cup Kidney Beans
1/2 Cup Shredded Cheddar
4 Portuguese Rolls
1 Tsp Cumin
1 Tsp Cayenne Pepper
Salt & Pepper to Taste
Directions
Finely chop & sauté vegetables with the dried herbs in a large saucepan on medium heat.
Mix in the tomato paste & bring to a boil.
Then add in chop meat & cook thoroughly for approx. 18 minutes.
Remove from heat & fold in the kidney beans.
Cut the top of the Portuguese roll (removing the center) & fill with the chili. Sprinkle the top with cheddar cheese & bake in the oven for 4 minutes at 350 degrees.
